Description
This pasta comes from central-southern Italy. Pipe Rigate is like snail-shaped pasta but with ridges on both ends. They're great for sauces that aren't too thick because they can trap the sauce well. They go especially well with meaty sauces like pork or beef ragù, sausage, or mushroom sauces. In the summer, they're perfect with light sauces made from fresh tomatoes and mozzarella, or for baked dishes.
